Foods and Nutrition (22202)

Discover the dynamic world of Foods and Nutrition, where theory and practical skills unite. This course empowers students to gain a basic understanding of nutrition, apply this knowledge to plan for balanced meals, and engage in the art of basic food preparation through teacher-led demonstrations. Special emphasis is placed on the nutritional needs of teenagers, guiding students in planning meals that not only meet nutritional requirements but also align with diverse lifestyle choices. As a culmination of the course, students will have the opportunity to earn the nationally recognized ServSafe® Food Handler Certification authorized by the National Restaurant Association Educational Foundation. This industry based certification ensures students are equipped with the essential skills for both personal health and potential culinary careers. Child Development (19255)

Credit: 1.0

Prerequisite: 11th or 12th grade status, written application

 

This course is designed to help students explore curriculum that will prepare them for life as parents and for careers in fields such as education, child psychology, pediatric medicine/dentistry, or family therapy. Students will work with children in a preschool setting supported by the study of child development that emphasizes the preschool child. Content in the areas of social, intellectual, physical, moral, and emotional development will be applied through lesson planning, teaching in the preschool, observing, and studying 4-5 year-olds in a part time preschool laboratory setting and classroom setting. Students will develop competence in developmentally appropriate practices, positive guidance techniques, health and nutrition, and creative teaching techniques. Higher-level skills in oral and written communication will be addressed.  This course will give students instruction in Adult, Child, and Baby First Aid/CPR/AED modeling the American Red Cross guidelines (or equivalent). In order to receive industry certification, students must pass all skill and written tests as well as the hours of instruction requirement. There is a fee that goes to the Red Cross for its administrative duty (currently $38).

 

Principles of Teaching (19052)

Credit: 1.0

Prerequisite: 12th grade status, written application

This course is designed to help students apply the knowledge gained in Child Development (note: Child Development not required) and to enhance their guidance and instructional skills through direct interaction in the laboratory preschool. The students will develop practical techniques for guiding and teaching young children and their families. Students will prepare lesson plans complete with learning activities and instructional materials that are aligned with the PA standards. They will also participate in discussing observations and evaluations. The course is recommended for students considering a career in education, day care, or related fields dealing with children.
